Chicken Tinga

Uplevel your taco night with Chicken Tinga!

Chicken Tinga

• 1 tbsp olive oil

• 1 onion, roughly chopped

• 1 tsp Kosher salt

• 3 cloves garlic, roughly chopped

• 1 tbsp Mexican oregano

• 1 tsp cumin

• 2 - 4 chipotle chiles in adobo

• 1 14.5 oz can fire-roasted diced tomatoes

• 1/2 cup chicken stock

• 6 cups shredded chicken

Place a large pan over medium heat. Sauté the onion in olive oil until soft. Season with the salt. Add the garlic, oregano, cumin and chipotles and toast for one minute, stirring regularly. Add the tomatoes and chicken stock and simmer for five minutes. Transfer the mixture to a blender and purée.

Place the shredded chicken in the pan and return the sauce to the pan. Cook until just heated through. Serve with your favorite taco fixings.
